Gluten Free Goodness

Well, sort of.
I tried making Mary's delicious straw and hay gluten free style. It looked good, but was lacking some serious flavor. Maybe it was the white wine I didn't have. Hmmm, oh well. Better luck next time. I still had two helpings as did Peyton.

I have also comes to grips with the fact that if I want a dessert or something super unhealthy, I will need to make it myself. I can't just reach for the cheetos or chips ahoy like I used to. There are plenty of gluten free options of those things at the store, but they are really expensive you don't get much for your money. Yesterday, I had a craving for cake. I looked around and found these
in the fridge. I had all the wheat free flours, so I got to work.
The batter was super firm and weird looking and tasted nasty. I was so nervous it was going to be a massive failure.
The cakes were totally stuck in the pans too. I had to work really hard to get them out in one piece. I managed. Then I made the icing. If the cake tasted bad at least the icing would be good.

Well, here it is all iced. Kind of messy, but a cake that I can eat. 
Eliza hated it.
Kai had three bites.
Peyton loved it.
Andy devoured it.
I thought it was way too heavy and just ok.
I am not sure if I would make it again. The major positive thing about the carrot cake was the way it made the house smell. I would just like to find recipes that taste as delicious as they smell! Something with chocolate will be next.

  1. looks jummy! time to surf the web for gluten-free websites and blogs with recipes. there have to be other peeps out there that are living gluten-free and still enjoying delicious foods. i'll so some searching since i have nothing else to do. xx
